Jason's Crock Pot Soup Beans

Jason's Crock Pot Soup Beans

This is just good old fashioned Hillbilly comfort food coming at you right here!

Ingredients:


2lbs. dry pinto or great northern beans
1/2 lb chopped bacon or ham
1 can of vegetable broth
1 onion minced
2 stalks of celery minced
2 Tbsp. minced fresh parsley, or 1 tbsp. dried parsley flakes
4 garlic cloves minced
(base ingredients are the same again and minced in the ninja together)
1/2 tsp. black pepper
1/2 tsp. salt
1 Tbsp. of olive oil
water (see recipe for amount)

Directions:

Mince the veggies together and set aside

*CLEAN the BEANS*  Notice the rock in the photo!  Use a colander and rinse and sort the beans thoroughly.


Place beans in the crock pot and top with minced veggies, olive oil, bacon, salt, pepper and vegetable broth (you can use stock as well about 1 cup).

Finish filling crock pot with water till about 1" from top.


Cook on low in 2 hour increments, stirring and adding water as needed.  Total time 8 hours.

Serve and ENJOY!
